View Operational Steps

There are nine operational steps that can be used to define a HACCP process. Operational steps are defined by their Control Measures. A Control Measure is an action or activity that can be used to prevent, eliminate, or reduce an identified hazard. There are two types of Control Measures: Standard Operating Procedures (SOPs) and Critical Control Points (CCPs).

In order to complete the definition of an Operational Step we must also know the control measures (Standard Operating Procedures and Critical Control Points) that apply to that Operational Step.  

Click Control Measures to edit the Operational Step by changing the SOPs and CCPs associated with that Operational Step.

Click Cancel to return to the HACCP page.

Important: You can edit operational steps by changing the control measures that define an operational step. Changing control measures for an operational step can have consequences throughout your operation.
