Create a New Critical Control Point (CCP)

Create a new Critical Control Point (CCP) when the default or secondary CCPs provided in WinSNAP are not appropriate for a particular item category in your menu.

Creating a New CCP 

  1. From the Operational Steps page, click Control Measures.
  2. Click Critical Control Points.
  3. Click Add New Critical Control Point if you would like to create a completely new CCP or click Add Copy to create a new CCP based on the currently selected CCP.
  4. Enter Critical Limit information. The Critical Limit fields are used to inform staff of specific limits that must be adhered to for compliance with the food safety plan. For example, the critical limit for cooking beef may be different than the critical limit for cooking pork, based on recommended internal temperatures.
  5. Enter Corrective Action information. The Corrective Action fields are used to detail specific actions that are to be taken if the temperature of an item falls within the range specified in the "Temp from" and "Temp to" fields.
    If you need to create another corrective action, click Add New Corrective Action.
  6. Select a default CCP using the drop-down menu. It is recommended that you leave the original default CCPs selected and use Associations for any user-created CCPs.
    Important: Changing the default CCP is not recommended unless you are very sure the new CCP applies to ALL processes that contain this operational step. Changing the default CCP will change the default for all processes that contain the particular operational step the CCP is part of.
  7. Click Save.
