Viewing HACCP Processes

A process consists of a group of operational steps. There are nine operational steps that can be assigned to a process. Each operational step has two types of control measures that define the operational step: Standard Operating Procedures (SOPs) and Critical Control Points (CCPs).

There are two kinds of processes that can be assigned to menu items for HACCP:

Standard Processes: These processes are present by default and use pre-selected operational steps (with default SOPs and CCPs). The standard processes are Complex Food Preparation, No Cook, and Same Day Service. Standard processes cannot be deleted or replaced.
Note that although you cannot directly modify standard processes, the process can be modified if the control measures for the associated operational steps are modified. Be very cautious about modifying control measures for operational steps. Default control measures should be used whenever possible. Changing control measures for an operational step can have global consequences; any process that contains that operational step will be impacted.

User-Defined Processes: These processes are created by the user, and they may be created when menu items fall outside the range of the default processes, e.g. you have an item that does not need to be cooked but requires additional operational steps beyond those assigned to the No Cook standard process.

Viewing a Process

To view a process, select HACCP on the WebSMARTT Home page. Then, under Setup/Reference, click Processes.

On the Processes screen, you will see the standard processes as well as user-defined processes. Any user-defined processes may be edited or deleted.

 * Update this screenshot to include user-defined processes so that an Edit and X button are visible *

Click the name of a process in the list. The Process Details screen opens for that process.
