WinFSIM has been approved by the USDA as an approved Menu Planning Tool for 6 Cent Certification and Nutrient Analysis software has been approved for SMI
requirements.
Nutrient Standards
Updating Nutrient Standards
- Locate the Maintenance tab and select Nutrient Standards.
- Check the Source list in the Nutrient Standard Maintenance window for any existing standards that could be calculated.
If applicable, change the existing standards that are marked as "calculated" in the source column by adding the word "old," or another term, so that they are easy to distinguish from other standards.
The standard lines marked "Reference" and "USDA" are the regulations and rules. These lines cannot be edited or changed in any way.
Adding New Standards
- Scroll to the bottom of the Nutrient Standard Maintenance window and double click on the words new Nutrient Standard.
- Enter the description of the new standard, and be sure to include whether it is a breakfast or lunch in the description. Press the enter or tab key.
- The window, Generate Nutritional Standards, will appear and you will have your choice to create a:
- Copy of an existing lunch or breakfast standard
- Select Copy an existing standard.
- Click the arrow for the drop down selection to select which standard you would like to copy.
- New breakfast standards based on 25% of daily requirements
- Select Calculated Breakfast (25% of Daily).
- Then select an age group and chose the ages or grades.
- User-Defined Breakfast or Lunch standard
- Select User-Defined Breakfast or User-Defined Lunch.
- Copy of an existing lunch or breakfast standard
- Click Ok.
Add in the nutrient values for all appropriate nutrients fields that are listed.
- Click Apply and then Ok to save.
New nutrient columns cannot be added at this time; however, the user can add additional information to the pre-existing columns. Six cent certification regulations do not allow any changes to the USDA standards for calories, saturated fat and sodium. Yet, standard values for other nutrients, such as fiber, may be added.
Menu Count Type & Meal Patterns
Updating Menu Count Type
- Locate the Maintenance tab and select Menu Management.
- Next click the Menu Count Types tab.
- Select the appropriate updated standards under the Breakfast Nutrient Standard column and the Lunch Nutrient Standard column. This changes the Weighted Nutrient Standard report to the correct standards.
- Select the appropriate meal patterns under Breakfast Meal Pattern and Lunch Meal Pattern. This assigns the correct meal pattern standard for the Meal Pattern Analysis Report.
- Click Apply and then Ok to save.
Changes to Meal Pattern Contributions – Item to Recipe
The current production reports are completed based on the contribution of the item. The new regulations state the contributions are assigned at the recipe; however, the USDA has not posted a prototype of the production report.
- The item contributions do not need to be updated for grain, fruits, and vegetables to reflect the correct whole–or not whole–grain or color vegetable.
- The only items that need to be changed are fluid milk items.
Making the Changes
- Locate the Maintenance tab and select Items.
- Click the Items tab.
- Select the fluid milk item you wish to change and click Edit.
You'll notice there are no changes within the Item Info section. Click the Nutrition button.
Next to Milk Contribution Type select the appropriate description that describes this type of fluid milk from the drop down list.
Click Apply and then Ok to save.
These changes drive the Meal Pattern Analysis Report.
The software upgrade added several more food contributions at the item level. The contribution value for fruits/vegetables was moved after the upgrade to Vegetable Other. The contribution value for grains/breads was moved to grains–not whole grains though. The milk and meat component sections of the table did not change.
Do you need to change the fruits/vegetables and grains/breads to the new values? No.
The current production reports will not reflect the newly created contribution groups. It will continue to print the fruit and vegetables in the fruits/vegetable section. The same is true for the grains/breads. The recipe is where the contributions will be keyed. The USDA has not provided a prototype of the new production report, so this report is not in the current upgrade.
Updating Recipe Information
The food contribution is now keyed at the recipe level.
Recipes that provide a meal pattern contribution must be edited. The following are some of the most prominent changes that must take place:
- All recipes that fulfill a meal pattern contribution will need to have the Food Contribution entered for each serving size.
- The fluid milk recipes need to have the Menu Item Type changed to Milk.
- The grain based desserts need to have the Grain-Based Dessert box checked.
Locating Recipe Information
- Locate the Maintenance tab and select Recipes.
- Click the Recipes tab.
- Select the recipe you wish to update and click Edit.
Updating Recipe Information
- If a recipe is a fluid milk, it must be changed in the Menu Item Type to "Milk.” This is so the milk ingredients in the recipe are counted as meeting the fluid milk component.
- The Recipe Info section has an additional check box field that must be checked for any recipes that are Grain-Based Desserts--desserts with bread or grain in them.
Food Contribution Button
A new addition to the screen, this button was added for the user to enter each recipe's contributions. This is required in order to meet the standards for 6 cent regulations.
- Click the Food Contribution button.
- Manually enter the contribution for each serving size to each recipe.
- If the recipe contains more than one serving size, you must add the contributions for the second serving size to the second column.
Menus have not changed.
There are now more specific fields for fruits and vegetables:

Recalculating & Updating Recipes' Nutrient Data
Updating Recipes Nutrient Data
- Locate the Maintenance tab and select Recipes.
- Click the Recalculate Nutrition tab.
- A notice will appear asking, "Are you sure you want to recalculate the nutritional content of all unattached recipes with calculated nutrition values?"
- Select Yes.
- After the program has recalculated your information, select OK.
Reports
Meal Pattern Analysis Report
- Locate the Reports tab and select Nutrient Analysis.
- Click the Meal Pattern Analysis tab. This creates the 6 cent report.
The Meal Pattern Analysis window will appear. Under Menu Template, select the appropriate option.
- Under Menu Count Type, select the appropriate type.
- In the Date Range section you may pick dates that range from 3-7 days.
- For the Meal Type section, check the box for Breakfast or Lunch.
- Click View or Ok to view the report. The report checks the daily requirements and then the weekly requirements.
Nutrient Analysis Report
- Locate the Reports tab and select Nutrient Analysis.
- Click the Weighted Nutrient Analysis tab.
The Pick Weighted Nutrient Analysis Source window will appear. In the From and to section, select the date range.
- In the Meal section, select the appropriate meal.
- In the next section, Choose the source of your weighted nutrient analysis, select the Menu Template.
- Next to the Template, use the arrow to select from the drop down menu an appropriate template.
- Click Manually enter counts and the click Ok.
- The window, Weighted Menu Analysis, will appear and you will need to select the appropriate Menu Count Type from the drop down menu. This is the nutrient standard that will be used in the report.
- Enter the meal count in the top section, Serving Dates.
- Enter the counts for each recipe under, Menus and Recipes.
- Click Print.
- Another window will appear asking for your preference in the level of detail. The Hide recipe detail is the default, which is the simplified version. Select the level of detail that is appropriate for you.
- In order to print the complete Nutrient Analysis Report, un-check the Display Simplified Nutrient Analysis box.
- Click Ok.
The report lists the daily nutrient values, and is only compared to the standards on the summary page. The standards are now weekly average standards and not daily standards.
Frequently Asked Questions
- What if my standards don’t look the way I expected them to look?
You may have entered the wrong standard into the Breakfast Nutrient Standard column or the Lunch Nutrient Standard column from the Menu Count Type and Meal Patterns section. - Do all recipes need to be updated with the food contributions or is there another way to approach this?
Update only recipes that are on current menus. For example, you may want to update all of this week's recipes, and then check the reports. Next, you can begin to work on the following week's recipes. - How can I see all of the recipes used in a given week?
- Select Reports and then Production.
- Then, click on Menu Planning Lists.
- The Menu Planning List window will appear.
- The recipe description is shown on the Menu Production Report and Nutrient Analysis Report.
